Zesty Prawn Tacos

 

SERVES 4

INGREDIENTS

  • 600g raw, peeled prawns

  • 1/2 white onion, chopped

  • 1 tbsp olive oil

  • 1 tbs of mexican seasoning

  • 12 small soft tortillas

  • 1 avocado

  • 2 cups shredded coleslaw mix

  • Fresh coriander

  • Fresh lime wedges

  • Kewpie Mayo (optional to serve)

METHOD

  1. Set aside raw prawns in a bowl and sprinkle with mexican seasoning.

  2. Heat a large frypan and add olive oil. Once heated, add diced onion. Fry off

  3. Once onion is translucent in colour, add prawn mixture to frypan. Cook for ~5 mins until prawns change colour.

  4. Heat tortillas as per directions on packet.

  5. Drizzle coleslaw with a dash of olive oil and fresh lime juice.

  6. Build your tacos, adding salad mixture, prawns, coriander and a dash of lime juice on top. Option to add Kewpie Mayo on top. Fold up and enjoy!
