Zesty Prawn Tacos
SERVES 4
INGREDIENTS
600g raw, peeled prawns
1/2 white onion, chopped
1 tbsp olive oil
1 tbs of mexican seasoning
12 small soft tortillas
1 avocado
2 cups shredded coleslaw mix
Fresh coriander
Fresh lime wedges
Kewpie Mayo (optional to serve)
METHOD
Set aside raw prawns in a bowl and sprinkle with mexican seasoning.
Heat a large frypan and add olive oil. Once heated, add diced onion. Fry off
Once onion is translucent in colour, add prawn mixture to frypan. Cook for ~5 mins until prawns change colour.
Heat tortillas as per directions on packet.
Drizzle coleslaw with a dash of olive oil and fresh lime juice.
Build your tacos, adding salad mixture, prawns, coriander and a dash of lime juice on top. Option to add Kewpie Mayo on top. Fold up and enjoy!
