Pesto Chicken Pasta

SERVES 4

INGREDIENTS

  • 1 tbs olive oil

  • 1/2 brown onion

  • 2 cloves garlic

  • 2 chicken breasts

  • 1/4 cup pesto

  • 1/4 cup parmesan

  • 2 tbs greek yoghurt

  • Salt, pepper and chilli flakes to taste

  • 200g cherry tomatoes (sliced in half)

  • Your choice of pasta ~4 cups cooked

  • Fresh basil to serve

ALTERNATIVES TO CHICKEN

  • Tofu, chickpeas, tempeh, beans.

  • Prawns

  • Additional vegetables: broccoli, spinach, snow peas, peas and zucchini.

METHOD

  1. Cook your pasta in a large pot according to the directions on the packet.

  2. While the pasta is cooking, add olive oil into a large pan and heat on medium heat. Add diced onion and cook until golden.

  3. Mince garlic and add to pan with sliced chicken. Season with salt pepper and chilli flakes. Cook for ~5 mins until browned.

  4. Add pesto, greek yoghurt and parmesan. Stirring to combine and leave to simmer for 3 minutes.

  5. Add chopped tomatoes and cooked pasta. Stir until fully combined.

  6. Remove from heat and serve immediately.

  7. Garnish with more parmesan and fresh basil.
