Fudgy Chocolate Brownies
MAKES 9-12 BROWNIES
INGREDIENTS
400g tin of black beans (drained and rinsed 240g)
1 egg
2 tbs cacao powder
1/2 c flour of choice
1/2 tsp bicarbonate soda
2 tsp vanilla essence
1 tbs smooth peanut butter
1/2 c Chocolate Chips (I used the Noshu Sugar Free Choc Chips)
METHOD
Pre-heat oven to 180C and line a 8x8 baking dish.
Drain liquid from black beans and rinse thoroughly.
Combine all ingredients in a food processor until completely smooth, this may take 2-3 mins.
Stir in choc chips and pour mixture into baking dish.
Option to add additional choc chips on top.
Cook for 15-18mins. Remove from heat and leave to cool before cutting.
Enjoy warm or cold.
