Coconut Rice
SERVES 2-3
INGREDIENTS
1 cup uncooked basmati or jasmine rice
400ml can coconut milk
100ml water
Optional coriander and 1 tsp raw sugar
METHOD
Add rice, coconut milk, water, coriander and sugar to a rice cooker or saucepan.
If using a saucepan bring to the boil. Next, reduce to a low heat and cover saucepan.
Simmer until rice is cooked for ~20 minutes.
Use a fork to seperate the grains. Option to stir in additional coriander.
Serve with your alongside your favourite dish.
