Coconut Rice

 

SERVES 2-3

INGREDIENTS

  • 1 cup uncooked basmati or jasmine rice

  • 400ml can coconut milk

  • 100ml water

  • Optional coriander and 1 tsp raw sugar

METHOD

  1. Add rice, coconut milk, water, coriander and sugar to a rice cooker or saucepan.

  2. If using a saucepan bring to the boil. Next, reduce to a low heat and cover saucepan.

  3. Simmer until rice is cooked for ~20 minutes.

  4. Use a fork to seperate the grains. Option to stir in additional coriander.

  5. Serve with your alongside your favourite dish.
