Mediterranean Lemon Chicken Salad
SERVES 4
INGREDIENTS
Chicken/Marinade
500g chicken thigh or breast
2 tbs olive oil
1 tbs red wine vinegar
Juice of 1 lemon
Grated zest of 1 lemon
3 garlic cloves minces
2 tsp dried oregano
Salt and pepper to taste
Salad
4 cups of washed and chopped cos lettuce
1 cucumber diced
2 tomoatoes diced
1/2 red onion diced
3/4 cup pitted olives
1 pita bread per person
Tzatziki to serve
METHOD
Cut up chicken in pieces of roughly 3x3cm.
In a bowl, combine all marinade ingredients and add chicken. Marinate for a minimum of 30 minutes.
Add chicken to air-fryer and cook at 200C for 15-20 minutes (depending on size of chicken pieces.
Combine salad ingredients and divide between plates. Drizzle with olive oil and sprinkle with salt flakes.
On a large fry pan over medium heat add a dash of olive oil and add 1 pita bread at a time. Cook until lightly golden brown and flip. Repeat with all pita breads.
Cut pita bread into triangles.
Arrange chicken in bowl. Serve with salad, pita bread, tzatiki and fresh lemon wedges.
