Veggie Egg Nets

SERVES 1

INGREDIENTS

  • 2 free-range eggs

  • 1/2 carrot

  • 1/2 zucchini

  • S + P, chilli flakes

  • Vegetable spiralizer

METHOD

  1. Cut off ends of vegetables and using a spiralizer make “noodles” out of the carrot and zucchini.

  2. In a medium-size nonstick pan drizzle with olive oil. Once hot, add vegetable noodles, s+p and chilli flakes. Cook for 3 mins until soft. Turn off heat.

  3. Seperate the vegetable mixture in the pan to form 2 nest-shapes. Make a shallow hole in the middle for the eggs.

  4. Turn the heat back to medium and crack an egg in each “nest”.

  5. Cover pan with a lid and cook for ~5 mins.

  6. Serve with avocado and toast.
