Sticky Date Muffins
MAKES 8 MUFFINS
INGREDIENTS
MUFFINS:
1 cup dried dates
2 eggs
1/4 cup Natvia Gold or your choice of sugar/sweetener
3/4 cup plain flour
3/4 cup coconut flour
1 tsp bi carb soda
1 tsp vanilla essence
CARAMEL SAUCE:
1/2 cup coconut cream
1 tsp vanilla essence
2 tbs butter
2 tbs Natvia Gold or your choice of sugar/sweetener
1/2 tsp salt
METHOD
Preheat oven to 180°C and lightly grease a muffin tray or line with baking paper.
Place dates in a bowl and cover with 1 cup boiling water. Leave to soak for ~10 mins until dates become soft.
In a food processor place the eggs, sugar of choice and vanilla essence. Mix on high for 2 mins until mixture appears light and creamy.
Add both types of flour and bi carb soda to the food processor. Add water from soaked dates to mixing bowl.
Mix until combined.
Add dates and stir through using a spoon.
Spoon the batter evenly between 8 muffin cups.
Bake for 15-18mins, or until cooked in the centre.
Allow to cool for 15mins before removing from tray and leave to cool on rack.
FOR THE CARAMEL SAUCE:
In a small saucepan on medium, heat butter and sugar until melted and add all other ingredients.
Stir for 3-5 mins until smooth.
Pour directly over muffins and enjoy!!
