Chilli Coconut Prawn Bowl
SERVES 2
INGREDIENTS
Prawns:
400-500g peeled raw prawns
3 tbs coconut milk
1tbs chilli oil
Pinch of chilli flakes
1/2 the juice of a lime
1 tbs vegetable stock
Salad
1 serve of vermicelli noodles per person
1 baby cos lettuce
1/4 red onion
1 tomato
1/2 cucumber
Fresh coriander
Dressing
3 tbs coconut milk
2 tbs sweet chilli sauce
2 tbs sweet chilli mayonaisse
1/2 the juice of a lime
METHOD
Combine all ingredients to fresh prawns and set aside for 15+ mins to marinate.
Cook at 200C in air fryer for 10-15 mins.
Place vermicelli noodles in a bowl with salad ingredients. Add prawns to the top of your meal.
Drizzle with a few tablespoons of dressing, a squeeze of lime and coriander.
