Chilli Coconut Prawn Bowl

 

SERVES 2

INGREDIENTS

Prawns:

  • 400-500g peeled raw prawns

  • 3 tbs coconut milk

  • 1tbs chilli oil

  • Pinch of chilli flakes

  • 1/2 the juice of a lime

  • 1 tbs vegetable stock

Salad

  • 1 serve of vermicelli noodles per person

  • 1 baby cos lettuce

  • 1/4 red onion

  • 1 tomato

  • 1/2 cucumber

  • Fresh coriander

Dressing

  • 3 tbs coconut milk

  • 2 tbs sweet chilli sauce

  • 2 tbs sweet chilli mayonaisse

  • 1/2 the juice of a lime

METHOD

  1. Combine all ingredients to fresh prawns and set aside for 15+ mins to marinate.

  2. Cook at 200C in air fryer for 10-15 mins.

  3. Place vermicelli noodles in a bowl with salad ingredients. Add prawns to the top of your meal.

  4. Drizzle with a few tablespoons of dressing, a squeeze of lime and coriander.
