Crispy Gnocchi Chorizo Bake

 

SERVES 3

INGREDIENTS

  • 3 tbs olive oil

  • 2 cloves garlic, crushed

  • 1/2 red onion, roughly chopped

  • 500g gnocchi

  • 200-250g chorizo, cut into slices

  • 250g cherry tomatoes

  • 400g tin cherry or chopped tomatoes

  • Mozzarella to taste

  • Basil leaves (optional)

  • Salt, pepper and chilli flakes to taste

METHOD

  1. Pre-heat oven to 200°C.

  2. In a large mixing bowl, combine olive oil, garlic, and seasonings. Adding gnocchi, cherry tomatoes, onion, chorizo and tinned tomatoes. Lightly toss to combine.

  3. Transfer to an oven safe baking tray and sprinkle with mozzarella.

  4. Bake for around 30 minutes until gnochhi appears crispy.

  5. Serve with fresh basil and additional salt, pepper and chilli if desired.

Vegan/vegetarian option… Remove chorizo or add cubed tofu. Use your choice of cheese to suit dietary needs.
