Cookie Dough Slice

 
Cookie slice

MAKES 12 SMALL SQUARES

INGREDIENTS

BASE:

  • 1 cup dried dates

  • 3/4 cup plain or buckwheat flour

  • 1/2 cup coconut flour

  • 2 tbs cacao powder

  • 2 tbs honey

  • 2 tbs milk of choice

COOKIE DOUGH:

  • 400g can chickpeas

  • 1/2 cup pre-soaked dates

  • 2 tbs peanut butter

  • 1 tbs honey

  • 1/4 cup cacao nibs or choc chips

METHOD

  1. Soak 1.5 cups dates in boiling water for 5 minutes and drain off liquid. Add 1 cup of dates to a food processor. Keeping the remainder for the second layer.

  2. Place all remaining ‘base’ ingredients into the food processor and blitz until all combined. Transfer to a lined baking tray and place in the refrigerator.

  3. Rinse the food processor. Drain and rinse chickpeas.

  4. Add ‘cookie dough’ ingredients except cacao nibs or choc chips. Blend until smooth.

  5. Stir through cacao nibs and place mixture on top of the ‘base’.

  6. Leave to set in the freezer for 4 hours. Slice it up and enjoy.
