Corn Fritters + Avocado Salsa
SERVES 4
INGREDIENTS
CORN FRITTERS:
2 eggs
2 x 400g tins of corn
1 red onion
1 cup flour of choice
1 tsp sodium bicarbonate
1 tsp each of salt + pepper, chilli + paprika
AVOCADO SALSA:
1 avocado
1/2 red onion
1 tomato
2 tbsp lime juice
Handful of coriander
Salt + pepper
METHOD
Drain 2 tins of corn. Place 1 full tin into a food processor and set the other aside.
Add all remaining ingredients to the food processor, except the last tin of corn.
Add second tin of corn and mix through with a spoon.
Heat a non-stick to medium heat and drizzle with drizzle olive oil.
Spoon mixture 2-3 tablespoons of mixture onto the pan. Cook for 2 minutes each side or until golden brown.
To make salsa - in a bowl add avocado and mash with a fork. Add chopped onion and tomato, lime juice and seasoning.
Serve fritters hot or cold with avocado salsa.
