Corn Fritters + Avocado Salsa

SERVES 4

INGREDIENTS

CORN FRITTERS:

  • 2 eggs

  • 2 x 400g tins of corn

  • 1 red onion

  • 1 cup flour of choice

  • 1 tsp sodium bicarbonate

  • 1 tsp each of salt + pepper, chilli + paprika

AVOCADO SALSA:

  • 1 avocado

  • 1/2 red onion

  • 1 tomato

  • 2 tbsp lime juice

  • Handful of coriander

  • Salt + pepper

METHOD

  1. Drain 2 tins of corn. Place 1 full tin into a food processor and set the other aside.

  2. Add all remaining ingredients to the food processor, except the last tin of corn.

  3. Add second tin of corn and mix through with a spoon.

  4. Heat a non-stick to medium heat and drizzle with drizzle olive oil.

  5. Spoon mixture 2-3 tablespoons of mixture onto the pan. Cook for 2 minutes each side or until golden brown.

  6. To make salsa - in a bowl add avocado and mash with a fork. Add chopped onion and tomato, lime juice and seasoning.

  7. Serve fritters hot or cold with avocado salsa.
