Coconut Crunch Granola

A HEALTHY BREAKFAST OR SNACK THAT IS LOW GI, HIGH PROTEIN, HIGH IN OMEGA-3’S AND DELICIOUS. FOR EXTRA SWEETNESS ADD YOUR FAVOURITE DRIED FRUIT AND CACAO NIBS.


SERVES 20

INGREDIENTS

  • 3 c rolled oats

  • 1 c raw almonds

  • 1 c raw cashews

  • 1/4 c flaxseed meal

  • 1/2 c chia seeds

  • 1 c shredded coconut

  • 1/2 c pure maple syrup

  • 1 tsp vanilla essence

  • Pinch of salt

METHOD

  1. Preheat oven to 150°C and line a large baking tray.

  2. Combine all ingredients in a mixing bowl and place the mixture on tray.

  3. Bake for 30 minutes, stirring mixture every 10 mins. Ensure tray is in on the middle tray of the oven (avoid burning).

  4. Remove from the oven and let it cool. Store granola in an air tight container.

  5. To serve, sprinkle on top of your favourite yoghurt, stewed fruit or on a chia pudding.
