White Choc Chip Cookies
MAKES 12 COOKIES
INGREDIENTS
1 c plain flour
1/2 c coconut flour
1/2 tsp baking soda
1 tsp sea salt
1 large egg
1/4 c softened coconut oil
3 tbs maple syrup
3 tbs honey
2 tsp vanilla essence
3/4 c of your favourite chocolate chips
METHOD
Preheat oven to 180C. Line a baking tray with baking paper.
In a large mixing bowl, combine all dry ingredients together.
Using a food processor blend all wet ingredients (softened coconut oil, honey, maple syrup, egg and vanilla essence) together for 3 minutes on high. Mixture should be light and fluffy.
Add dry mixture slowly and beat until a soft cookie dough forms. If mixture feels dry add an additional tbs of maple syrup. Stir in choc chips.
Divide mixture into 12 evenly sized balls and place on baking tray. Press down on each cookie with the back of a fork.
Place in oven for 10-12 mins.
Remove from heat and leave to cool for 15mins.
