Green Coconut Soup
SERVES 4
INGREDIENTS
1 tbs olive oil
1 tbs green curry paste
2 onions
2 cloves garlic
1.5 cups frozen peas
2 cups spinach
2 zucchinis
1 cup chopped kale or broccoli
400ml coconut milk
2 cups vegetable stock
To taste: Pepper - chilli - coriander
METHOD
Heat olive oil in large pot. Add chopped onion, diced garlic, curry paste and your choice of herbs/spices.
Add stock, coconut milk, diced zucchini and peas to pot. Bring to the boil.
Reduce heat to a low simmer for 10 mins. Add spinach, kale or broccoli and stir through.
Option to lightly blend with a stick blender/food processor or eat as is.
Best served warm with your favourite crusty bread.
