Green Coconut Soup

SERVES 4

INGREDIENTS

  • 1 tbs olive oil

  • 1 tbs green curry paste

  • 2 onions

  • 2 cloves garlic

  • 1.5 cups frozen peas

  • 2 cups spinach

  • 2 zucchinis

  • 1 cup chopped kale or broccoli

  • 400ml coconut milk

  • 2 cups vegetable stock

  • To taste: Pepper - chilli - coriander

METHOD

  1. Heat olive oil in large pot. Add chopped onion, diced garlic, curry paste and your choice of herbs/spices.

  2. Add stock, coconut milk, diced zucchini and peas to pot. Bring to the boil.

  3. Reduce heat to a low simmer for 10 mins. Add spinach, kale or broccoli and stir through.

  4. Option to lightly blend with a stick blender/food processor or eat as is.

  5. Best served warm with your favourite crusty bread.
