Lentil Bolognese

SERVES 4

INGREDIENTS

  • 1 brown onion

  • 1 tbs olive oil

  • S+p, chilli flakes

  • 2 cloves of garlic

  • 400g tin lentils (drained + rinsed)

  • 400g tin tomatoes

  • 350g tomato passata

  • 120g spinach

  • Pasta of your choice

METHOD

  1. Heat olive oil in a non-stick pan. Add diced onion, crushed garlic and spices.

  2. Add lentils, tomatoes and passata. Simmer for 15-30mins until the sauce has thickened.

  3. Stir in spinach prior to serving on your choice of pasta. Top with a sprinkle of cheese.
