Lentil Bolognese
SERVES 4
INGREDIENTS
1 brown onion
1 tbs olive oil
S+p, chilli flakes
2 cloves of garlic
400g tin lentils (drained + rinsed)
400g tin tomatoes
350g tomato passata
120g spinach
Pasta of your choice
METHOD
Heat olive oil in a non-stick pan. Add diced onion, crushed garlic and spices.
Add lentils, tomatoes and passata. Simmer for 15-30mins until the sauce has thickened.
Stir in spinach prior to serving on your choice of pasta. Top with a sprinkle of cheese.
