Savoury Muffins

INGREDIENTS

  • 4 free-range eggs

  • 1 zucchini

  • 1 carrot

  • 1/2 c plain flour

  • 1/2 c greek yoghurt

  • 1/2 c grated cheese

  • 1/2 c milk of choice

  • S + P to taste

METHOD

  1. Preheat your own to 180°C and lightly brush a muffin tray with oil.

  2. Grate carrot and zucchini. Place on paper towel and squeeze out excess water from vegetables to prevent muffins from becoming soggy.

  3. Add beaten eggs to a large mixing bowl. Add grated veg and all other ingredients. Fold together until mixture is combined.

  4. Distribute mixture evenly between 12 muffin cups.

  5. Bake for 15-20 mins. Cool in the pan for 5 mins them remove to stand on a cooling rack.
