Savoury Muffins

INGREDIENTS
4 free-range eggs
1 zucchini
1 carrot
1/2 c plain flour
1/2 c greek yoghurt
1/2 c grated cheese
1/2 c milk of choice
S + P to taste
METHOD
Preheat your own to 180°C and lightly brush a muffin tray with oil.
Grate carrot and zucchini. Place on paper towel and squeeze out excess water from vegetables to prevent muffins from becoming soggy.
Add beaten eggs to a large mixing bowl. Add grated veg and all other ingredients. Fold together until mixture is combined.
Distribute mixture evenly between 12 muffin cups.
Bake for 15-20 mins. Cool in the pan for 5 mins them remove to stand on a cooling rack.
